On the Wagon...Again
So, I got stressed and started eating wheat again. I ate bread and pasta and all sorts of stuff. Then a week or so ago I got a tummy ache. Kindof like the caterpillar in The Very Hungry Caterpillar, which I highly recommend to anybody with a one year old like mine. Anyway, the New Year is just around the corner and I'm going to try very hard to do well. We bought some more quinoa pasta and gluten free bisquick and we're on our way to living wheat free...again.

Some Things Wheat Still Just Does Better
So, I tried to make a gluten free bread yesterday. It turned out ok, but it doesn't taste the same as homemade wheat bread. But it works for sandwiches and stuff. It just doesn't taste the same by itself.

Hamburgers
So, my husband loves burgers. He would eat them every day if I would let him. Now, the typical hamburger has the bread, lettuce, tomato, beef, cheese and condiments. I was having a hard time trying to figure out a good wheat free version and I finally did. Skip the bun. Just get extra lettuce and put the beef in between. In-N-Out calls this "Protein Style" but it's better when done at home. Since there are only two of us, I normally eat the rest of the tomato slices instead of having ketchup.

More Pasta Fun
So my sister has been telling me to go to her friend's blog for wheat free recipies for a couple of months now and I FINALLY figured out how to do it. I can be a bit of a ditz and since I'm going back to school it's been a little crazy around here. Anyway, this is a good pasta recipe that I found on her website.

It's really yummy and since I made the white sauce with rice flour instead of wheat and quinoa pasta instead of regular pasta it's wheat free and very good.

Pasta Revisited
So, I love pasta. That was the one thing that I was sad to have to give up when I went wheat free. But, after a little bit of searching and trial and error my husband and I have finally found a good wheat free pasta. It's from Quinoa Corporation and it tastes just like the "real thing". I was really excited because it doesn't fall apart and get funny like the rice pasta. We liked it so much that we bought a 10 lb bag, so now we have lots of pasta for the year. Now, if I can only figure out how to make bread...

Meatloaf
So, my husband and I love meatloaf, but normally you put breadcrumbs in it. Well, I found a great substitute for breadcrumbs. I used rice chex instead. It's a great substitute and you can use whatever gluten free chex-type cereal. Anyway, it tasted just the same.

Some Things Wheat Just Does Better
Like pasta. I tried to make spaghetti tonight with some rice pasta that we found at Sprouts. It did not taste good. The pasta never got to al dente. It went from too hard to too soft and then had a grainy texture when we tasted it, it basically disintegrated in my mouth. Not good, we broke out the whole wheat pasta, I'll try a different type of wheat-free pasta another day.
